Happy Monday!
I think everyday should be happy and it's a holiday so many people will be off work. D is included in that (well he has to make a stop to print something, oops!). It was an early morning. I set my alarm for 6am, but you know me by now, I was awake about an hour before that, but I laid in bed and just relaxed and focused on my breathing. My alarm went off and I got up and headed downstairs. It was the usual morning ritual except I was going to head right out to the gym. I grabbed a small cup of roasted dandelion tea with collagen and a Whole30 complaint bar. I know that these bars should be for emergency purposes only but I didn't want to eat a heavy meal and run to the gym. I ate half before and half after.
My Monday gym routine can be a little longer than the rest of the week. I needed to be at the gym early and back because I'm picking up my dad at the airport and it's snowing! I had some extra time after the gym to hit Trader Joe's for a few items for work and stop to get coffee for D at Dunkin Donuts. His current kick is maple pecan syrup. I still find it amazing that they don't have alternative milks.
I just bumped up my weight on chest press. I was at 30# for the longest time. I decided today was the day to do it. 4 rounds of 6. I'm definitely pushing higher weight lately and I'm only 112 lbs. My leg press is at 260#! Not too bad!
I checked my dad's flight and had a little bit of time, so I grabbed a tablespoon of sunflower butter since I was getting hungry.
2 hours later I got dad picked up and we headed to Northville to go to Rebecca's. It's a historic little restaurant and ice cream shop. They have 15 tables available and when we got there we grabbed the last one. It probably didn't help that school was out and the place was swarming with kids and mom's! I was all ready for breakfast. I figured today would be my last day for eggs for a while so why not get an omelet cooked in olive oil with onions, tomato, mushrooms and spinach inside. Topped with avocado, 3 turkey sausages and grilled tomatoes. I ate every single bite! SO GOOD! After I dropped dad off so he could go to work then take the grandkids to dinner at Shiro's (repeat from last night).
I came home and meal prepped, well more like veggie prepped! I roasted spaghetti squash, beets and sweet potatoes.
Then I cut up brussel sprouts, broccoli, cauliflower, celery, carrots, onions, and red pepper.
The finished roasted products all done and in containers for easy meals this week. I'm following Real Deals for my plan this week. I also prepped my brunch for tomorrow too. In the morning I will just re-package it.
Dinner was a grass fed burger (leftover) with brussel sprouts and Sir Kensington's mayo. When I finished I went back for some roasted broccoli and cauliflower. I think I have an issue of eating too much! It just tastes so good I can't help myself. I mean seriously though, who makes themselves full on vegetables?! Probably just me. Me being full on vegetables or just good healthful food keeps me from wanting to eat anything bad. I can't say I have anything bad I would eat in the house anyway, but you catch the drift.
So that's my full day! I have my egg free breakfast casserole packed and ready to go tomorrow for work and now to spend a little quality time with D and the pups.
