I'm loving all the things cooked in the Instant Pot.  What would normally take 45 minutes to an hour takes 20 minutes.  When I get home from work I am starving (of course I'm always hungry) and it's so nice to get things done quickly!

This is my own version of AIP so if you're not in a reintroduction phase please use caution with spices.  This is the Instant Pot Curried Lemon Coconut Chicken from Kitchen Stewardship.


Funny enough I made roasted broccoli with this too and cauliflower rice.  Very similar to the butter chicken I made last week, just without the ghee!

I should have taken additional pictures but this just doesn't look pretty enough to photograph!  I snacked on a few pieces the day after I made this too.

Thursday night is usually reserved for breakfast but D wasn't feeling good.  BUT, I should back track my day so you come to my present state of mind.  Yesterday I worked from 8:30 am to 9:30 pm.  My work has bi-yearly trade shows and everyone works all day.  I didn't get dinner until after I got home and already exhausted.  


Thursday I would typically run at the gym but since I knew I would be exhausted I made it my rest day.Jack got me up around 4 to go outside and luckily I fell back to sleep until D's alarm went off.  Up and out of bed I fed the furry beasties and made D his weekday breakfast.  I so wanted to go back to bed!  D said why don't you?!  Seriously I have to be to work I can't do that.  I showered and made my breakfast and that's when his throat clearing began and said he thought he was getting sick.  SO he stayed home and I went to work.  Jack tore down the curtains and kicked D in the face within the hour I was gone.  UGH!  I carried on with my day.  At lunch I ran to Trader Joe's and got a few items and D's favorite chocolates and a soft pretzel.  Home and was able  to wolf down my shake and some veggies.  The rest of the day was uneventful until I was asked to go to get chicken noodle soup and phish food ice cream.



After the store I got home, fed the beasties again, gave D his soup and roll followed by his ice cream and made my dinner.  I was starving so grabbed things that were already done.  Sugar snap peas to snack.  I warmed up some hash browns in a skillet then added my leftover chicken on the side and I topped the hash browns with a fried egg.  Still I was hungry and ate 2 tbs of coconut butter.  It only has 2 grams of sugar so I believe I am ok there.  I feel I need more protein so I may grab some chorizo Applegate Organic Turkey Breast.  Bed will certainly happen early as well!

Though this will be me....

But, I will go to the gym for 5 am!

Stressed and completely upset

I've debated if I should post this but it's part of my healing process, so here it is!

I'm extremely angry at this point (understatement!).  I can't have anything!  It doesn't matter that I may not want it I still can't have it.  I want a latte, I want to be able to eat ice cream if I want.   I want to eat a piece of chocolate or be able to bake something.  I want a different texture.  I'm not even hungry right now and I feel like if I could eat all the things I would.  I want a Siete tortilla chip with guacamole.  Or even a plantain chip for all that matters but nope!  Can't even do that.


I know this isn't forever but it's starting to weigh on me.  When you do things for others and get them the things that you can't have you become angry.  It's not directed at them you are just plan straight up angry, bitchy, unhappy, blah blah blah.



Pathetic enough I couldn't even buy anything I wanted.  All my money is going toward my care.  Yeah I know stop bitching, but I really don't want to.  I really just want to have my pity party right now and just get it all off my chest.  If I can 't rant then what good is writing about anything?!


Oh, but the one thing that I can have all I want of..... water.  Yeah WTH?!?  I hate water.  Yes I am one of those weird people.  I'd love to have a Zevia and I haven't had one of those in months.



Ok, so that was yesterday and today is Monday and I'm better this evening than I was this morning.  I got up early and went to the gym, which was great.  I had a decent workout.  It was a leg focused day and after running yesterday my legs were a little more tired so I couldn't push the amount weight I would have liked.  

I got home and my bad mood continued.  Everything was driving me nuts and I certainly didn't want to go to work!  I made my breakfast and had my tea as usual.  I had to take Jack out to go to the bathroom since all noises bother him and Stryker got me dirty!  I was so over today already.  I forgot to take everything with me.  No water bottle, no tea bag, nothing.  Then I noticed a 12:30 house showing when I got in the car!  ARG!  I usually call mom but didn't since I figured I would snap.

Long story, but everything went fine today.  I had meetings all morning and as soon as those were done it was off to lunch at home.  The buyers showed up on time and I was back to work when I needed to be.  I ended up emailing my doctor and letting him know how I felt.  He says it's for sure part of the detox process, as he has been through it as well as other patients and suggested to take some activated charcoal to help with the candida die off effects.  So I think I am going to try it tonight.

Dinner was fabulous and I think it helped.  I made sweet potato fries and roasted broccoli, avocado, bacon, brussel sprouts and a grass fed bacon burger mix.


The rest of the night I will try to relax and prepare for tomorrow.

3 weeks in and workouts

I'm on week three of my elimination protocol.  I almost thought I screwed up since I was drinking coconut milk.  Turns out the Trader Joe's canned organic coconut milk is perfect.  It's only 2 grams of sugar.  I was buying the stuff in the cartoon, pretty much any variety that was there and all the unsweetened kinds.  I liked them all but they also had other ingredients that I really didn't need.  Trader Joe's only has organic coconut and water.  Done and so tasty!  And I should mention it's on $1.29!  Bargain!


So speaking of tea can I just say that I'm so over it, whatever, too long drinking it and so I HATE TEA!  Yes, it's fine but I really want my coffee.  I miss the taste!  Caffeine didn't have an effect when I got rid of it February 1st, I just miss it!  I did go ut and buy more dandelion and chicory tea and a new one to me Pukka.  It just sounds cute! Pukka 😁  I got the After Dinner and I have to say it's very pleasant.

What else can I say about week 3?  I've lost 4 pounds, roughly.  I can't say I really care but it is nice to have my pants fit a bit better.  I wonder what the difference is.  Week 1 I was eating coconut butter at night.  Week 2 I got rid of it and now week 3 I've had it a couple times.

Week 1, I felt super bloated.  Week 2 that pretty much went away, but was occasional.  This week I can't say I have noticed any bloating BUT I have been super hungry.  I have been eating my shake at lunch with some veggies and I still am getting ravenous by the time I leave work.  I eat a big plate of veggies and meat at breakfast and again at dinner.  All I can say is it's good that I eat simple.  Dinner is ready in under 20 minutes.

Bacon on the bottom under the hash browns and brussels that were cooked in the fat and coconut oil. Beef burger on red leaf lettuce, olives and pickles.  There was a little dressing that I found as well too.  Hilary's Spicy Island Dressing.
I want to try the Beet Vinagrette next.  They are gluten free, corn free, egg free, vegan and soy free.  Perfect for me right now!

As far as workouts they have been amped up but toned down in heaviness.  What do I mean by that?  It's added exercise and some additional with lower weights to learn the moves.  There is also an added day of weights.  The first 7 weeks of my plan were 4 days of weights, 2 days of cardio and a rest day.  Same for this week except the added weight day.  My treadmill running has been pretty great.  I'm pretty happy with my progress and will measure at the end, which I think is 17 weeks.  My run days are Thursday (should be rest) and Sunday (longer run).

I think that is all my updates for right now.  What else can I talk about soon?  I will figure that out!

Sunday Run Day, Indian Butter Chicken & 1 Update

Today was an early day.  I woke at 6:30am but got out of bed an hour later and went to the market to grab what I needed for the week.  I stopped at Dunkin on the way home to grab D a caramel coffee, a cinnamon roll and the pups a vanilla sprinkle donut.

Later it was time to hit the gym and run.  It was a little trying but overall pretty good.  I did intervals the second half.  Funny you can see the top of my head in the reflection from the tv!


I did drink a bunch of water after and thought it would be interesting to jump on the scale, I know I wasn't dehydrated.  Two weeks into my protocol and I figured why not!  Down 4 pounds, not bad.  I really think things shifted toward the positive this week.  So I am happy with the progression so far.  BUT, right now I really want something crunchy to break things up and a latte!  Oh well, soon enough right.  Patience!

Not much else after that until it was time to make dinner.  The Castaway Kitchen has made a phenomenal dish that I was tackling for dinner!  Indian Butter Chicken

 
I've been in the need for new flavors!  This delivered.  Three great things about this dish.  It's paleo, Whole30 approved and nightshade free.  I think I do better without a few nightshades, tomatoes being the biggest one.  I think having them in small amounts and once or twice a week is okay, but more than that and I don't feel my best.


Look at all the steam!  The recipe called for skinless chicken thighs.  I used bone in skin on chicken thighs and I think the extra fat in the dish was worth it.  Nice thing about this recipe is that you can sauté in the instant pot and finish it there too.  This dish is super easy and nothing weird is needed in the ingredients.  You can make your own ghee if you don't have some already.


My final product!  I sautéed up some brussels and added some cauliflower rice.  This was so good and I'm so full from it.  I can't speak highly enough of it.  

I love all ethnic foods and need to figure out where the next stop will be!  Being mindful of my protocol and what doesn't work for me of course!

Breakfast skillets -Eggless!

Breakfast is my favorite, unless there is steak involved or burger for dinner (like tonight), then that would be my favorite.  Since eliminating eggs I have found breakfast to not be quite stellar as I once did.  I love my bacon so I am happy that I will keep that in every breakfast I have.  But, since starting my journey every morning I have been throwing all the things in the skillet.  Here is a recap of some of those breakfasts.  A variety of vegetables, avocado, bacon and other meat in mix.  I add extra fat by using either coconut or avocado oil.

  
 

I thought it would be good to highlight some other blogs that have skillet breakfast as well.  Maybe it will break me out of a rut and move to other things.  Though I am restricted in this elimination phase I could still mix it up a bit.

There are so many more to choose from.  My advice - just grab things out of the refrigerator, chop and cook.  Don't forget to add some spices.  This morning I had a bunch of brussel sprouts in my pan with swiss chard, chicken, bacon and avocado, of course.  I decided I had some thick aged balsamic vinegar I could add.  Wow, that one thing did really take it up a notch!  So my advice when venturing into the AIP realm is to break out whatever toppings, sauces and spices you can and see what happens.

Sweet Potato Avocado "Toast"

Everyone is familiar with avocado toast - it's all over the internet.  I have been wanting to make this for the longest time.  Now since I am not "recreating" anything.  I certainly couldn't do a paleo bread right.  Even if it's made from scratch.  So I decided tonight was the night to try my luck and it came out perfect.  I have been hungry all day today too.


I peeled a small sweet potato and sliced it in 1/4" thick slices.  I placed each slice in the toaster on high and toasted it 4 times.  I saw this on a blog somewhere so I do apologize that I do't remember where it was.  I placed spinach on the plate and placed the slices top.  Sliced avocado was next, followed by bacon and eggs over medium.  I wanted some extra protein since I was feeling extra hungry today, this is Applegate Grass fed roast beef and some kalamata olives.

This is so easy I think I will have it every Thursday night.  Thursday nights in my house is breakfast for dinner.  I miss my pancakes and peanut butter but I think this replacement is just what I needed!

Sunday and all the things

Sunday morning donut run (for D and the pups) at the Daily Dozen, seems like a Sunday ritual!  Stryker ended up with a upset tummy after Friday's human breakfast food feast!  He seems much better this morning.  He has had consistent diarrhea - but he has maintained his hydration, stayed active and has eaten a bland diet.


Me on the other hand had a very flavorful breakfast with a dandelion tea latte.  I sautéed radishes, zucchini, mushrooms, shredded brussels, bacon and avocado.  I just loved this combination.


I drank my tea with this view this morning.  I realized what time it was.  We had a house showing at 11 and it was almost 10.  I got D up, he drank his coffee and ate some Girl Scout cereal - Thin Mint.  He said it was decent.  At least it is a limited edition.  He could get to really liking it.  Anyway, I vacuumed, dusted, put laundry away and spot cleaned anything that needed it.  We packed up the pups and headed to the pet store to get kitty food and pumpkin for Stryker.


Isn't she cute - she loves to lay on paper and coats - pretty much anything she can snuggle into.  Unfortunately I had to push her off so I could get to the gym to run.


I did a slow run today, I just wanted to get 8 miles in and it really didn't matter how long it took.  I wasn't looking to push it today, there was no needed to.  I'm happy with the results!  I stopped at Dunkin donuts on my way home to get D another coffee - he was home on the spinner.  Once home I grabbed a grass fed beef stick and a few bites of coconut chips.  

I read some emails then decided I really needed to meditate.  It has been a very shaky practice for me to devote 30 minutes to de-stressing.  I downloaded a random app with soothing sounds, went into another room and relaxed.  It was long enough because at 30 minutes I was getting hungry.  

I roasted some cabbage in avocado oil (which I ate several pieces) and made this yummy dinner.  Parsnips fries again, pan fried asparagus, ribeye and avocado.  After dinner was 2 tablespoons of coconut butter.


I wanted to mention one last thing before I finish this day up.  So I have been trying to get in at least 60 ounces of water per day.  Some days are easier then others.  But what I have been noticing this week is my lips and skin are drier than what they have been and I have an increase in thirst.  I haven't found anything saying why this could be but just started looking.  WebMD pointed at a couple things which I know are not my case.  I will continue and see how things change.

Saturday

Early morning farmers market run again in Royal Oak.  I was sandwiched between the pups all night and I couldn't take any more.  So I got up, fed them and Kaat and headed out to the market.


I got there when they opened to beat the rush.  It looked pretty packed with vendors, this was only a small section of the indoor market.  I have to say I am anxiously awaiting spring and the Birmingham market.  Though as I think about it we may not be in Birmingham then and I will have to find a new market!  OH NO!  I love that market.  I guess it will depend on where we end up moving to.  If D could have his way right now we would be in southern California and there are a lot of markets there.  My haul today was from John Henry's meat.  Their beef/bacon burger is fabulous!  I also got bacon, eggs, chicken breasts and some beef bones.  For vegetables I got rutabaga, sweet potato, zucchini and cabbage.  I have to go to Trader Joe's later today for the rest of my groceries


On my way back home I stopped at Starbucks for D's white chocolate peppermint mocha.  It wasn't too bad of a wait.  Though when I left the line was out on the main road.  Yikes! So not. safe


Breakfast time.  I really do just love throwing things together and make bowl meals.  Ok, so today's was on a plate since I wanted it to look pretty!  Todays breakfast was hash browns, swiss chard, baby bella mushrooms, zucchini, bacon and avocado.  I almost ate the whole avocado but figured I probably shouldn't. 

Isn't it pretty?!  Yummy too.


I finally decided to open this tea from Traditional Medicinals.  I haven't tried just roasted dandelion yet, my previous was a mix of teas with it.  I opened a can of coconut milk, which just has coconut and not everything else in it like the carton brands I have been purchasing.  OMG, this was so good!  Wonder why I waited so long to try it! 

I did some work around the house cleaning up for tomorrow's open house and got some laundry done.  In a little while I will go to the gym.  In the meantime I had to get my shake in, 4 scoops today, I am getting use to it.

I felt a little hungry so I cooked up some cauliflower.  Now time for the gym!

A few hours later I made dinner.  Herb Roasted Parsnip Fries from Primal Palate, mixed veggies cooked in olive oil in a skillet - cauliflower, asparagus, shaved brussels and baby bella mushroom.  Vera Cruz fish from Trader Joe's was oven baked.  This was a fabulous dinner and I'm wondering why I haven't made parsnip fries until now!

It will be a week on Monday that I have started my protocol.  I can't I have felt or noticed any difference. The only thing I did notice was the few minor breakouts I had after eating eggs.  My hunger has been all over the place.  I'm either feeling really full and bloated or starving.  If I don't have a substantial amount of food at meal time then I find myself snacking on whatever I can find.  Like today, breakfast, 2 cups of tea, shake, cauliflower, coconut butter then dinner.  I guess when you break it down it really wasn't much, but those shakes (powder alone) are 340 calories.  Really it's not bad and I'm not tracking, I'm not.  This is the purpose of this blog.  I don't want to do the things I have done, break the pattern!  I kept thinking today is I can detox harder.  Too funny, but I thought I should be feeling something, but I'm not.

I guess I will re-visit this on Monday,  Now to relax!  Tomorrow is run day and we have a boring house showing.

Made up for no veggies yesterday?

Early morning start - awake by 4:30.  I got decent sleep for being stressed by all the things going on.  I changed into my workout clothes, grabbed the pups so they could go outside and do their business.  It took about 10 minutes, but I had enough time to get to the gym before they opened.  I brought the pups back into the room and told D I would be back around 6 with coffee and breakfast.

The gym was only 5 minutes from the hotel, super nice.  I got there with a few minutes to spare.  Here is my workout today.

10 minute elliptical warm up
4 sets single leg glute bridges
6 sets romanian deadlifts - 70# bar - bodyweight squats between sets
4 sets curtsy squats - 27.5# dumbbells
6 sets hip thrusters - 50#
4 sets roll outs
4 sets stability ball hamstring curls
10 minute jog


I got back to the hotel just after 6 and went to the lobby to grab breakfast.  It certainly had a great variety.  I grabbed for the pups - a bagel with peanut butter and a couple mini donuts.  For D I grabbed a variety - 2 hard boiled eggs, waffle with syrup, bacon, mini donuts and coffee with lots of cream.  That pile of bacon above we shared.  I also had a tablespoon of coconut butter let so had that with my herbal tea.  We finished, cleaned up and showered.  We grabbed our things and hoped for the best, meaning power when we got home.  Pups in the car, all checked out and off we went.

We arrived a few minutes later to see lights on around the block - YES!!  POWER!!  Out the car we went and into the house.  Lights were on.  I cleaned out the refrigerator as D headed to work and I finished breakfast by eating an avocado.  I grabbed my shake for the day and headed to work.


Work paid for lunch - Yes again!  I ate everything.  I should mention about an hour after I got to work I made my shake and felt pretty good.  I felt really good with this late lunch from Anita's Kitchen - Chopped salad with chicken, olives, an egg, tomato and cucumber.  It was so filling and I was happy to have a good amount of food into me.


Derek was hungry when we both got home so we went to the Original Pancake House.  I was still full so ordered a light dinner that I really intended to take home and eat later.  It was pretty good - 2 eggs over easy and 2 sausage patties.  It came with pancakes on the side which I boxed up for D for tomorrow's breakfast.  So did all that lettuce really fill me up so much?!  I feel decent right now.  But ya know I really would like to drop about 10 pounds.  I am happy with the strength I've gained and I can still run without being winded, but not happy with how my pants fit.  How's that?!

So now I am debating about going to the farmers market again since I had to throw all the meat I got away.  More veggies would be good too.

I hate power outages!

It's Thursday, though it feels like it should be Friday!  As I went to bed Wednesday night the winds were still gusting pretty fiercely.  But, they had greatly diminished from what they had been.  We kept our power all day long so I really didn't think much of losing it at this point.  D had left for the gym and I had gone to bed.  I was awoke by him asking when the power went out.  UGH!  You have got to be kidding me!

I didn't sleep well and had planned on sleeping soundly until 6:30 since today was to be a total rest day.  FAT chance for that.  I tossed and turned for hours.  I hate having to throw all the food away I just purchased, since it happened in the summer too.

Finally got out of bed at 6:15.  Showered off and dressed quickly as it was already getting colder in the house.  I fed the dogs and gave D his cereal to eat, he wasn't happy since he was cold and it was cold.  I made a shake, since I had to drink that anyway.  Made me nauseous.  I also grabbed a few bites of the chicken that I had just made. Mostly gave to the pups since they were begging.  I was dreading the whole day since I knew work had half power, which meant computers, phones, some light and ZERO heat.  Ugh!  I grabbed what was left of my coconut chips and headed out.

Once at work I grabbed some hot water and kept my coat on and went to work.  I was grumpy and anxious.  Everyone wanted to order breakfast.  My favorite meal and it was a no go, I opted for a side of bacon :(  It was good but for $5 I could have got a huge breakfast.  Unfortunately, it didn't arrive till almost 12!  What?!  I ate it up and headed back to the house to see what was going on.

And what was?  Nothing!  My app told me workers were in the area and there were none to be found.  D was home to shower, since he didn't earlier.  We let the pups out.  He grabbed a yogurt and a protein bar and I grabbed a Primal Beef Stick.  Seriously it just sucked food wise, but I couldn't cooked anything.  I searched for a hotel while D was getting ready.  I knew we wouldn't have power and may have to stay somewhere all weekend.

I went back to work a little late and finished up my day, again being productive.  I rushed home to get things together to get to the hotel.  It gets dark quick when you can't turn on a light.  I fed the pups and packed my bag.  D got home and got his stuff together.  We headed to Mt. Chalet which is right across the street for bunless burgers.  We walked back home, pet Kaat, grabbed the pups and headed to the hotel.  We found a good place with a larger bed then the last time this happened.


The Hawthorn Suites by Wyndham was a great option.  Not too far from the house, just over 5 minutes and close to the gym as well.  They have one here but something familiar is better.  I hope breakfast has some good options.  I know I will be very limited, but I have an avocado at home with my name on it just in case!

Well it's bed time, early but I'm getting up early too and I want some rest.  Another long day tomorrow.

Now what?

 Apparently I set my alarm for doing a home cardio workout this morning.  I still woke up at my "usual" time and just got up and headed for the gym.  Today is cardio only according to my plan.

Workout of the Day:  20 minutes elliptical - always variety in intensity.  That was followed by 30 minutes of treadmill jogging.  Nice and steady at 5.6.  Felt really great


I got home and took care of a few things, showered and ate some coconut butter.  I somehow forgot about this in my cupboard that I open daily.

I again as every morning battling for my breakfast with Kaat!  

She is just so cute.  

She lays on the table and annoyingly reaches her leg across the table and tries to put her paw in the bowl.  Who can blame her?!  All the bacon and pork!  YUM is all I have to say.  An herbal tea latte was on the side.  She has no problem steering clear of that.


I got the dishes cleaned up and got ready for work.  I even had time to vacuum the floors before I left.  They needed it.  Work wasn't bad today, I kept busy with all the calls I made but around noon my stomach began to grumble and I wanted to head home for a few reasons:  We had horrible wind gusts all day so I wanted to make sure the Big Dawg was ok.  He HATES noise.  I had to put him on his leash to get him out the door.  Wanted to make sure we had power.  Yes we do.  Then I wanted lunch!  As I prepared it I tried some jicama sticks I got at Trader Joe's.  I forgot how much I liked these.  Kind of sweet and crunchy.  I've been missing crunchy!  


Todays bowl was avocado, ground turkey, swiss chard, cauliflower and shredded brussel sprouts cooked in avocado oil.  I haven't had swiss chard in a long time and it wasn't too bad.

I got back to work and emailed my doctor to clarify that during this elimination phase I could have herbal teas, which happily I can and I have a few favorites.  I also wanted to see if I could eat Legit bread, it is seriously the best bread out there.  I sent him the link and even though it's paleo and clean it's still considered a "cheat".  So no go as a replacement for Thursday night pancake night.  I don't get any of it, no pancakes, no bread like product.  I considered eating eggs bacon, and maybe some parsnip fries, but since I had eggs yesterday I noticed today I have a couple breakouts! 


Could it be the eggs are offensive?!  I had broccoli too yesterday?  Is that possible?  A combination of two foods that are offensive?  I scored a 1 for both of these, so no more than 3 times per week.  It's questionable.  Another word on questionable I had the shake again, 4 scoops and by the end it just sit right.  I know I will get use to it, just like carob.  Once you are use to the odd taste you love it.

I did't eat a typical dinner since I wasn't really hungry when I got home.  I made D's dinner which was a quick orange chicken, sweet potato with peas and carrots.  I made a plain chicken breast cooked in some avocado oil for me and ate 3 small pieces, a few bites of roasted sweet potato.  Later I went back for the remainder of my roasted cauliflower and cabbage.  I topped it off with a few bites of coconut butter.

I'm not sure I'm getting at least 6 cups of vegetables?  Do you think it looks that way?

Thoughts on eggs - since I have a tendency for them to be offensive - acne causing?

What should I talk about in the upcoming days?

Meditation practice?  Workouts?  Meals on a protocol?  Something else?
